Well havnt brewed for a while, no time. But I need to brew for the WBC so here is my entry that im brewing on Sun.

Imperial Indian Pale Lager

94% Global Pils
6% Global Light Caramel
Or
90% Global Pils
10% Dextrose
Will see on the day? Dont know if I want dry or Sweeter?

20Ibu Simcoe @ 60 and 30

30g Simcoe 20g Riwaka & Motueka @ 15 5 and 0

Wyeast Czech Pils

1.081 - 1.012
80Ibu
9%abv

A shake of CaCl in it as well to get the Ca up.
Looks good Mike. I'd go for the dry version with all that sweet pils malt and all those sweet hops.
Yeah I Probably will, I done it this time last year with pils and dextrose and it turned out splendid, you know how it goes though, you allways want to try something else!!
I'd also go the dry way. Big hoppy lagers are great but they need to be crisp.

Well Here is the Hops

20Ibu Simcoe @ 60 and 30
50g Simcoe @ 15
30g Each Pacific Jade and Motueka @ 5 and Flame out

First for me I added 5.7g of CaCl to the mash and ended up with a mash ph of 5.22, Didnt even have to add lactic I thought I would have to give it a little squirt with an all Pilsner malt mash, that Global Pils is the shit!!
This one's going down tomorrow:

2.5 litre batch Mash at about 63 to 64ºC

350.00 gm Pale Malt (2 Row) Aus (5.9 EBC) Grain 100.00 %
5.00 gm Tettnang [4.50 %] (10 min) Hops 9.5 IBU
1 Pkg Southern German Lager (White Labs #WLP838) Yeast-Lager

Beer Profile Estimated Original Gravity: 1.040 SG
Estimated Final Gravity: 1.011 SG

It's an experiment to brew step one of a starter for a Munich Dunkel. I could just use LDME, but it gets expensive, so I thought I'd try to do it cheaper. Mrs warra is in Sydney at present, so I have plenty of time to amuse myself.
I've done that with some success, although I did use pilsner malt and didn't boil for long enough, it reeked of cooked corn. Didn't affect the eventual beer at all though
My pilsner malt cost me $75 AUD a bag.
I got a bargain pale bag for $35 AUD, so that's the go, for $0.50 of of malt, and a similar amount for hops. All up about $1!
I always pour off the starter beer, so it's no biggie.

Following a couple of malt-focused brews, decided on an APA for last night:
12kg Golden Promise
3.5kg Maris Otter
1.35kg Medium crystal
130g NZ Cascade @60min
100g NZ Cascade @10min
65g Motueka @10min
100g NZ Cascade @1min
65g Motueka @1min
Prob 2g/l dry hop of Cascade/Motueka (thinking 60/40 split)
Dropped onto the yeast cake from my headwetter brew last week.
OG 1.053, in theory about 50IBU

Just one stuff-up on the brew - not sure how it'll turn out, but the 10min hops went in at 30min by accident, so could end up a bit out of balance... Wort was tasting pretty bitter, lucky I like it that way!

Also grabbed a taste of the headwetter while I was transferring it to secondary for the dry hop (wouldn't have bothered but needed the fermenter it was in) and it's frickin' awesome. So looking forward to having a full keg of this in the fridge!
