The NZ government is considering raising taxes for all beer brewers to offset the social costs of irresponsible drinking. This could put some small craft breweries out of business. This poll argues that a 'one size fits all' increase in taxation will have a disastrous effect on New Zealand's boutique breweries - and that these brewers are the ones we should be rewarding not penalising.

I use mine for everything - including sparging.
Lagering has the same problem. My traditional lagers get 6~8 weeks in secondary, and they can take up to three months to carb up in a bottle. I have found there is always enough yeast to carbonate, just takes bloody ages!

Commissioning the new brewery

I thought I’d drop a blog on here outlining our first brew in the new brewery – thanks to Barry for advice on the use of hot water cylinders – we’re stoked with the results!

The brew went really well on Sunday, considering that the brewery has been completely reworked so we were starting with a brand new (to us) setup that hadn’t yet been calibrated! I’ll be adding sight-glasses to the vessels before the next brew, so hopefully that will make things a bit easier.

It's been a while since I've put a blog up - so I thought I'd put up something useful to y'all.

Tyler and Mike were over when they saw me do this, and I think that both of them are doing it now. I don't know how may of you are doing it, but it's worth doing if you're not - as I haven't noticed any detremental effects on the beer when you do it. So, what am I talking about? Is there anywhere in NZ that sells Hop Vines?

I'm in Wellington and was wondering if there's a place nearby that might have them. Would they be available at any garden centre? (probably not eh.)

Advice please?

I just recently (Sunday midday) brewed a Bishops Tipple clone. (I'm hoping) It was a partial mash, using:

1.5Ib pale malt,

500gms crystal malt

1oz black malt

1oz wheat malt

A can of coopers real ale for malt extract.

Goldings Hops

750gms Golden Syrup

2oz Molasses

And Safale s-04

The airlock on the fermenter only just started bubbling now when I got home from work. Normally when I brew, the airlock starts to bubble within an hour.

Should I be worried?
