Chucked the dry hops into the IPA this evening. It is down to 1006 from 1056 and it tastes good out of the sample jar. Can't wait to try it after the dry hop!

Will probably bottle it on Saturday.

I just unscrewed the lid of the fermenter, chucked the hop pellets in, put the lid back on and gave it a bit of a swirl, then propped it up ono a bit of an angle to help everything settle away from the tap.

Does anyone know what hops are in Epic Pale Ale? I tried it for the first time on the weekend and enjoyed it.
Pretty sure EPA is all US cascade?
That makes sense, definitely has a citrus thing going on. Must have a few more this weekend just to make sure I like it! :)

Just dry hopped my Cream Ale Mk III and checked the SG, its down to 1004, about 4-6 points lower than S-05 would have gone and with the WLP080 the sample seems alot fruitier which im not sure if its because it finished drier or just strain specific.. Theres also a slightly sulphorous crispness to it which ive read will condition out... So far pretty happy with it and have just bottled off some yeast to save for later, and on the cake I will be pitching this...

Got an OG of 1036 with 24 litres so around 27 IBU, pitched at 26*c after chilling for two hours :o( Got a wet towl wrapped around the fermenter with the cold water hose running on it lightly, should bring it down to 22/23*c hopefully

Next up, a hefe-weizen straight out of Brewing Classic Styles. Will probably chicken out and go wtih 40% wheat to avoid a stuck sparge.
