just scored a massive cheast freezer for a dozen beers
chucked in another 10ibus of centenial at the 60min to bring it up to 80ibu's just to make sure to kill off the High FG.
Hows This round 2 of this beer!!! Brewing this on Sat!!!!! Only thing is im swapping the 120 crystal for Caramalt!! Dont like dark crystal!! and Im going to get that water up to 300ppm of Sulphate to make that bitterness bite like a mule!!

No worries, im allways keen to swap beers.. Maybe 4 is a good number, fits in a moderately sized box perfectly? And wont be too crippling to post :o)

Our case swap box was $22 to send to Chch, and that was 9 bottles, so I imagine this will cost much less.
Yeah should be alittle cheaper but im not to worried about price more about trying other peoples beer!! keep in contact.

Furthermore I may throw in some chopped raisins or maybe dates, either at the end of boil or in the fermenter, not sure yet. Not too sure about the coriander seeds either.

Mashing at 68C.

Any comments or experience with something like this, feel free to share!:)
Oh, I may also try and infect some of the bottles with brettanomyces and see what happens after a year or so. Any ideas whether I can simply use the dregs of a bottle of Orval or do I need a fresh strain of the little nasties?:)
