Hows This round 2 of this beer!!! Brewing this on Sat!!!!! Only thing is im swapping the 120 crystal for Caramalt!! Dont like dark crystal!! and Im going to get that water up to 300ppm of Sulphate to make that bitterness bite like a mule!!

Furthermore I may throw in some chopped raisins or maybe dates, either at the end of boil or in the fermenter, not sure yet. Not too sure about the coriander seeds either.
Mashing at 68C.
Any comments or experience with something like this, feel free to share!:)
Oh, I may also try and infect some of the bottles with brettanomyces and see what happens after a year or so. Any ideas whether I can simply use the dregs of a bottle of Orval or do I need a fresh strain of the little nasties?:)
