Well heres my recipe again, Basicly It started as 7.5% Monster and I tamed it down as my mood changed!!
53% Global Pils
30% Weyermann Wheat
10% Cara Pils
7% Light Belgian Candy Sugar

64 Degree Mash till converted

40g Motueka @ 30
120g Motueka @ 5

Unibroue Yeast pitched @ 3/4 Mr Maltys recomendations @ 18 deg and let it raise by it self to 24 degs over 6 days. To help promote fruityness and and dryness no Whirflock or Servomcyes so it would help promote haze and good yeast farts.

70ppm Calcium, 6ppm Magnesium 11ppm Sodium 80ppm Sulphate 80ppm Chloride 20ppm Bicarb

Basicly brewed this beer to be a light fruity summers drink carbed it to around 3vols so watch out when you open them. First time at doing so, so be warned or chill to 0 deg and let it warm up to drinking temp. Only Bottled on the 9 Dec so you might have to hold off drinking this one to New Years Eve!! Enjoy and Messy Christmas!!

P.S This Yeast is a Beast!! Culture it out of the bottle if you can be bothered.

Pours a bright golden with puffy white head. Nice and bubbly.
Some cloves and a touch of banana on the nose, could swear I get a little candi sugar there too but it's probably just my mind playing tricks as I'm sure that's all fermented out.
Spritzy sweet malt fills the mouth and makes for a nice mouthfeel. Some clove funkiness with spot on bitterness and a good crisp finish. Nice burps too :)

I won't pretend to be an expert on Belgian blondes, for me the sweetness wasn't a problem, nor did I get any DMS. I got a wonderful refreshing beer, super easy to drink - though I agree the sweetness would be too much if I was drinking say more than say 5 litres ;)

A superb beer, so flawlessly brewed and super tasty. Cheers Mike. You bloody legend.

had this the other day and enjoyed it a lot! It was very well crafted, not a fault in sight. Looked great with a big proud head, nice creamy texture broken up perfectly by the high'ish carbonation. But what interested me most was that this was a perfect showcase for the yeast strain. There were not much bold maltiness to hide behind and the hops were suprisingly subdued considering you wacked 120 g in there at 5 mins. Anyways, I learned a lot about this yeast from this beer. It has phenols and esters alike, but the phenols are dominating. I'd say it closer to the Westmalle yeast (Wyeast 3787) than any of the other belgian strains I've played around with and as such probably more suited to darker beers than blondes, imo. In hindsight this makes sense to the Unibrou's I've tried: La Terrible was awesome, the lighter ones were just good...

Scibbled notes from the time remind me of the floral sweet nose and its golden colour in the glass
Nice toasty malt notes, with more toast and a smidge of golden syrup which i really liked. Very rich in the mouth and has a lovely clean finish. Well brewed and cheers
