That looks quite nice. I was thinking of doing something similar as far as the Pale Crystal goes - but bittering with Chinook, and maybe using Summit instead of Amarillo.

I'm after some advice from those who brew bitters - I've never done one yet, and have no idea where to start for a recipe. Anyone got one they're happy to share? Sometime along the lines of Galbraith's bellringer or bitter&twisted is kind of what I'm thinking.

was thinking about doing another APA next, but then i had a brain storm.
i've wanted to do a nice summer ale using artisian water (no. not like a Mata Artisian clone).
have a nice golden colour, bit of malt flavour, and a nice light hop taste and aroma. and light bitterness. i'm thinking of using mot through out. it's a nice light hop, not over powering, has a nice think flavour, and a good grassy aroma. i recon it'd be perfect for a summer ale.
want this one to be around 4.5% tops, in the bottle. which means a work OG of around 1.040 - 1.045 if my quick maths is correct (and i get 30 points of attenuation).
i'm used to brewing with around 5.5 - 6kg malt bills. but i obviously need to be much smaller with this one, which is where some advice would be greatly appriciated.
thinking of using MO for this for that little bit of extra body (i'd use kolsch, but apparently theres none left in NZ until march!). the break down will be a smaller version of my standard pale ale malt bill.
so i'm thinking:
4.1kg MO
200g Caramalt 30
200g Carapils
20L batch size, 60min boil.
15g mot at 60
20g mot at 20
20g mot at 10
25g mot at 0
25g mot to dry hop
i'm looking for a smaller version of a pale ale basically. what you guys recon?
I brewed a beer for XMas that was sorta too hoppy to be a blonde but not hoppy enough to be an APA. It was well balanced, some malt flavour, some hop flavour, balanced sweet to bitter, chill it down to near freezing for after mowing the lawns or enjoy it a bit warmer to get the full flavour.
For a 20L batch it was
4.3kg peal pale ale malt
100g carahell
66C mash
Southern Cross for bittering
30g US Cascade at flameout
30g US Cascade dry hop
