Thats about the ration for CaraPils in Pliny the Elder... no big deal.

Too much Cara and Mela, I reckon. Remember that most of the West Coast breweries are using pearl or similar.. not Maris Otter. Maris is the big daddy of malt and you have well over 10% of fat specialty.

Maybe you're going for a Union Jack? I thought it was a bit too fat, soft and clean to be honest (like Peter Dunne). Needed to drop the special or to harden up a little.

However... all your beers that I have tasted piss on mine... so go for it.

I'm going for a big fat chewy winter style IPA(ish) with no dry hop... With these beers, I mash at 65 degrees, so that there is not too much residual sweetness - but you still get the flavours.

You are right about Union Jack - it was very fat... needed more IBUs to overcome that CaraPils flavour - but for a domestic beer... it was so awesome. You can get that stuff for $1.50 at the Gas Station in Las Vegas mate.... WTF!!!!????

II was gonna do a Porter... but I got a hard on reading some tasting notes from Thornbridge Jaipur.... this was my recipated response... probably be nothing like it!

And looking at the recipe... you are right: It does seem like a lot of Sweet Malt. I'd almost be tempted to chuck some sugar in there to dry it out... but then I dont want too much booze... I might cut the amounts down a bit... maybe I'll grow some balls one day...? I dont know!!!
Go a wee bit sugar... two or three days into fermentation. Invert it.

IPKB... someone called me on an old promise, so there are three 330ml bottles left. Two for the homebrew comp and one for your trip down to Wellington (we can limber up on the 3 year old 10.5% Twisted Hop Epiphany).

I reckon both beers will be much better this year... i'm excited. There's nothing like a second bite at the cherry.

Get hard!! Who says that theres to much or to less? More has to be better right? thats the American Spirt!! opps it an English take on an west coast IPA so it will need to be a little conservative!!

Thanks to Mike for the hop addition suggestions - might dry hop for more than 3 days, tbd. Mashing at 65c, yeast will be some recycled US05
I allways dry hop for 10 days aye, reckon it helps, 3 days wouldnt really be enough IMO...
