What should I brew next??

I want to try something different, ive got three going at the moment, my belgian rye and two hoppy pale ales and I really want to keep my momentum going...

I was thinking a Saison, but dont have a suitable yeast :o(

Currently in stock at the moment I have a sack of Global Pilsner malt, a heap of Munich, some medium crystal, black, chocolate, and carafa, and im about to get some dark crystal, maybe some wheat and possible some other stuff?

Yeast I have in the fridge, S-05, wlp001, 1026, 1469, 3787, 2000, and S-33, oh, and S-23 (but stuff that) :oP

Hops : US Cascade, Williamette, NZ Goldings, 40gms Styrian, Sauvin, Southern Cross

Any ideas would be welcome?? :o)

Do a trippel with the 3787, and see if you can scab some bubblegum out of it.

7kg Pilsner malt
1kg Sugar
28 IBU of Styrrian for 60min

If you get 90% efficiency again - it'll be a serious beer and a half!
Repeat your last recipe, but think about the beer and what would make it better ?

Brew you favourite recipe, it's always good to have a favourite on hand - or is that a pint of your favourite beer in your hand ?

* edit - but there again I have very little imagination !
What about something different tho? Something just fully out there?? Trippell could be ok, but ive got a whole 20 litres of belgian rye to get through..

JT - Ive got way too many beers to try before I start perfecting recipes ;oP Allthough in saying that I do have a favourite which ive brewed about 4 times, but I cant get any damn amarillo :o(
Get that Red Ale rocking then 1026 should be a good yeast for that.

You are another poor bugger that is given two monitors with the expectation that you will get twice as much done eh??

It provides me with enough screen real estate to bring up RB while considering my code in the other.... or something like that!
