Ok, thanks. I will try it at about 1 to 4.

Just tasted the first bottle of the NZPA I put down. The 1 to 4 ratio for Nelson Sauvin to NZ Cascade seems really good! Not sure that the Hallertauer adds anything much, but I had some sitting around that needed using...

are you sure you like that much sauvin, i like it in moderation but i've found its pretty easy to overdo it and i've found it overpowers other hops pretty easily and i find too much to be a bit unpleasant! give it a go and see what you think but if you want to change it i reckon i'd go for about a quarter or the amount of riwaka at the most,maybe down to a sixth,having said that i've never used riwaka so i'm not sure how it would handle it,maybe it'll stand up to the sauvin?

is the ebc figure correct for the pale crystal?

That the info I have for the crystal. I have brewed this before in a 28L batch and it turned out great (by my taste buds) The final colour looked similar to the Beer Smith Indication. The hop recomendation are interesting. If you are correct in saying the Sauvin will over power the Riwaka then I realy like sauvin. But I will back off the sauvin next time to allow the riwaka flavour to come through. I have brewed over 50 AG brews and I realy like what I brew. I hope to enter the next Limbo Comp. May be others will like my creations.  Thanks Dave

Interesting comment on the sauvin. I put about 20g in a pilsner and it was not the best. In the IPA the mix of hops was Brilliant and I will brew this recipe many times in the future.

the first time i used it was in either a munich  sauvin smash,i can't remember the hopping rate but i really liked the sauvin, the next time i used it i went for it with the hops and it really wasn't that good,i think i used it 1:1 with amarillo,i may as well have saved the amarillo because i couldn't taste them,ever since then i've been pretty conservative with them.

and as you said above,its your tastes that count,if it were up to me sprouts wouldn't exist in the world......

Sprouts are ok, as long as hide the flavor !

Well I have four batches of pilsner/lager in various stages lying around and I wanted to do an ale, but I am still brewing at ambient (12°C on my garage floor) so have to stick with lagers for now. So I am thinking something malt driven rather than the hops that dominate my lagers. So a Munich Dunkel is the plan.

4.5Kg Light Munich

0.25Kg Chocolate malt (EBC 120)

Perhaps 0.2Kg Melanoidin Malt

10g Hallertau Aroma 8.1AA @ 60 mins

20g Hallertau Aroma 8.1 AA@ 15 mins

 

Est 26 IBU, but I might push that up to 28IBU. EBC 40.9

 

Probably a single infusion mash @66 °C with my modified BIAB/Chilli bin method.

Will dump onto a yeast cake of W-34/70

So this is what im planning on doing for my first all grain brew in a couple of weeks when Ive got all my equipment. Ive been using brewmate, seems all good for free software. Im just keeping it pretty simple and trying an APA

Cascade  25g @60

Simcoe  15g @30

Amarillo  10g @15

Says im getting about 50 IBUS which is all good with me. Of course if i can't source those hops i'll have to find alternatives. What you guys think? Anything look wrong here? Cheers

 

Jo has the cascade. That is not a problem. Amarillo may be hard for you to get, and I am not sure what would be a similar hop. It is a very unique flavour IMO.

 

Maybe you can go cascade and pacifica? Motueka hops may be nice as a replacement as well.

 

There are awesome hops in NZ, so do not discount them. Many homebrewers in the US wish they could get Sauvin!

The Cascade and Amarillo should be easy to get, I'd love to know where to get some Simcoe though, been searching high and low.

Any ideas of a decent substitution for it?
