Hi Guys, doing a Bohemian Pilsner next week and was going to do just with Motueka hops but have just got my hands on some Riwaka hops, should I do 50/50 with both? Thanks
Depends on what you want really, Motueka is slightly spicy with a bit of an orangey thing going on, where as Riwaka is quite tropical and passionfruit like... Emersons Pils is 100% Riwaka last time I heard? So a 50/50 combo with Motueka might be really nice!!
One thing - thats quite alot of carapils IMO, you may need to up the IBU's a little bit? But maybe someone else can shed a bit more light there?
I've done a Bo Pils with 100% Riwaka and my mate did the same recipe with 100% Motueka, both great beers. I got the tropical thing going on he got a kinda lychee flavour coming through. I reckon they would go well together. Our hop additions were 60, 30, 10, 0 and I do like the flavour that's given us. IBU's were about same as yours and I'd say they could definitely go bigger if you like your hops. I wonder if you'll get closer to the bitterness I was expecting with the 30 IBUs up front rather than splitting them up over the 60 mins?
Id say that 5% would be plenty!! To be honest you dont even really need it, it will add a bit more body and a bit of a caramel flavour, but without it it will be crisp and a bit cleaner IMO...
Have you had Tuatara helles? I brewed a Helles a while back that was really similar - about 4kg pils, 0.3kg Munich and 0.1kg Melanoidin (and 19IBU) - that was one malty sunuvabitch.
Where am I going with this? I dunno. I don't use Vienna much esp in beers like this. But since it's kilned less than Munich you won't get as many melanoidins, so 0.3kg sounds about right.
FWIW - the BoPils recipe in Brewing Classic Styles is1.056 - 1.016 94% pils 6% Carapils, 40 IBU, Czech Saaz all the way through with 2oz at 30, 1oz at 10 and 1oz at 0mins.

Thought I had carapils but it's caramalt I got from the local brewery. I see Dunedin Malthouse has carapils so I might order a couple of kg from them for my stock. As always thanks heaps guys for your help.
Hi All, I want to spend my next few brews on sessionable english ales. What do you think of the recipe below? I guess I'm aiming for something like Twisted Hop Goldings but slightly higher gravity. Looking for an orangey/red colour.
I'm planning on using 1968 but if that doesn't arrive in time I might have to go with US-05 at about 21deg. Will I get away with this sub?
Both Goldings's are NZ, Fuggles are imported. I'll be adding some amount of Gypsum.
