1g per litre each Simcoe, Amarillo and Centennial at flame out

What kind of flavour difference do you reckon there will be between using the Wyeast 1056 vs US-05?

I only ask since I was brewing APAs for a little while, and still want to perfect the recipe.

Not used the 1056 in an APA before and the only other beer I've brewed with it is dry hopping right now so can't really say. Been strictly an S05 man till this one so I'll need to let you know once its ready to drink. From reading I've done, there doesn't appear to be a lot between 1056 and S05 but I'm sure someone more knowledgeable in the area will let you know

Not a lot of difference between US-05 and 1056 in my experience. I always get a peach/apricot aroma from US-05 that I don't get from 1056. Both are good in an APA.

If I had to pick favourites I would choose 1056 for flavour/aroma and US-05 for usability.

I seem to get a little more sulphur (which I'd say is probably the same as the peach/apricot aroma that people pick up on), less flocculation and slightly more attenuation with S05 than I do with 1056. I've never done a true side by side or even the same recipe twice with swapping the yeast but these are general trends I seem to see over quite a few batches.

I'll use 1056 if it's suites me but I have no worries if I have to use SO5.

For me WLP001 reigns supreme for me, I wouldnt bother with WY1056 its just so damn close to S05 its not worth the money. I reacon the only way you could tell the diffrence between the two is if it was side byside or you have brewed a pale ale 1000's of times and and then you use a difrent strain. S05 for me.

I think it depends on the beer. For something as flavoursome as Yakima Monster (a very hoppy beer) or a Porter/Stout then I reckon most (if not all) people will struggle to tell the difference beteween 1056 and US-05. For a small subtle beer you may be able to pick up some differences but even then it would come down to personal preference as to which one you like better. In smaller, less flavoursome beers I get loads of that apricot/peach flavour that starts to annoy me after a while.

Personally, I don't see myself purchasing 1056 any time soon. If I want something different from US-05 I won't be looking at 1056 as it's too similar. I'm enjoying 1272 (American Ale II) in my pale ales at the moment and will probable stick with that for a while.

Joesph Wood, NZ's number 1 man for all things homebrew and hard to get ingredients such as yeast malt and hops. I will do a swap of 001 for 1272?

Haven't used WY1056, but I have made several batches with WLP001, and also with US05.

They are all essentially the same strain of yeast, WY1056 and WLP001 are liquid yeasts, US05 is the dry version.

The results to me are not noticably different, except that the liquid yeast versions seem to clear up be drinkable earlier than the dry yeast version. End result is much the same in my experience.
