Not really 'warm' as far as an ale would go, but for a lager yeast very warm..
If you still have the fridge, just freeze 6 1.5 litre bottles and swap them out every 12 hours.

I used to use a broken fridge, in a water bath, with wet tshirt and ice bottles swapped every 12 hours. Kept it between 11 and 13C. May not keep your beer as cool, but certainly cooler.

Watch out pilsner brewing is a disease....
I believe Steve Plowman uses 2112, at least I got some from him once
This Weekends Brew is a 40L Hefeweizen

60% Malted Wheat
40% Kolsch

Enhanced Decoction with a longer Acid rest to get the Ph down to the right level for the beer.

12Ibu of Sauvin

WLP300

To Easy!!
Have been drinking this for a while now and are loving Hefes!! I have used WY3068 but it is no where as good as WLP300 I have to say.
WLP300 is the shit! Never used 3068.

What temp did you ferment at? I've had good results with 17C from pitching to keg.
Pitched 3L starter into 39L of 1.046 @ 12 degreees and cap the ferment @ 18 degrees.
Yuck, there must be something wrong with you Mike ;oP lol

But seriously, how much banana does WLP300 give off? I quite liked Glens CS3 wheat beer as it had more bubblegum and clove phenols going on, but im so not into banana in any way!!
A nice balance not to much of anything really I actually find 3068 more clove like than banana, Im finding this beer to be a nice hit of banana and honey malt on the nose and at the front of the pallete with a spicy 'clove' finish. Really really nice!!! You should get into Hefes so so tasty in hot Hutt Valley days.
I'm with you on that bro. I wish I knew which one of my bottles in the yeast bank was wlp300. I could murder a good hefe right now. 30 degrees here.

Fuck.
You shoulnt be drinking hefe!! you should be down the wharf trying to pull in a 40kg Snapper like that dude this week!! Wheres your pic of you snappers? Dude I thought I would spice it alittle further and have an all brett pale ale!! its at about 1vol now and I have to say its the most intresting beer I have ever tried!!
Mine was quite clovey, probably due to a ferulic acid rest during the mash, ferulic acid is the precurser to the clove phenol.

Personally I prefer a balance between banana and clove - which I got pretty good with a single infusion at 67C.
