After primary, slit open 2 vanilla beans. Scrape the insides, chop the pods into quarters, add to secondary fermenter, rack beer onto vanilla. Taste periodically for the correct balance. Add bourbon to bottling bucket.

So as you can see I can't actually take credit for the above recipes, but at least proves they should do the trick.
Amen got a Silver 41/50 - Judges thought it a little too sweet needed more hop, i'd tend to agree.

Oh yeah forgot to mention style! American IPA.
I didn't do very well picking styles for my beers actually, something I need to work on. Had 3 where the judges recomended different styles.
