1 Golden Promise - Most versatile flavour. Goes well with hoppy beers, good enough maltiness to SMaSH and can be worked up for malty beers.
2 Maris Otter - Beautiful flavour, needs to be the "star of the show". Great to SMaSH with, but difficult to subdue.
3 Pearl - Gets a bit "husky" for my tastes with some yeast strains. Good flavour profile with others. Ironically - Chico is a good choice, but less estery English strains can get a but yuck.
This weekend's a Not So Blande Ale
Standard 92.5% ADM 5% Caramalt and 2.5% Wheat
1.040 with US05
12 IBU Super Alpha to bitter and 12 IBU Motueka spread from 30 minutes onwards
I've got the darker version on tap now and I'm really enjoying some Motueka after a long break.
Even dry hopped the current Hallertau Blande with some Cascade and Mot last night, although it's nicely balanced thought a bit of late 'zing' might make a good change, hope to have that on tap for the weekend
This Sunday, first big batch in the new brewery setup. Doing an all-Sauvin golden ale, recipe is (for a 60L batch)
12.5kg Maris Otter
1.25kg Cara-pils
0.25kg Dark crystal
40g Nelson Sauvin each at 60, 20, 10 and 0min. May also dry hop with a bit more.
Trusty old US-05 to ferment.
Will be interesting to see how the new setup goes - chilling that much wort is likely to be our biggest problem! We had a batch of this for my little sister's 30th and it went down very nicely even on a cold night, so this is just a scaled-up version of the same thing.
It's really just a variation of my pils receipe (more hop varieties) , but it matches the SOBA guidelines for a draught so thought I'd give it a crack. I'm at work so don't have the exact receipe, however goes a little something like...
90~95% Pils
2.5~7.5% Mix of Munich or Caramunich, Roast, or Dark Crystal for colour (Need to check the flavour portion to get my percentages correct)
2.5% Carapils
10 IBU Greenbullet @ 60
5 IBU Riwaka @ 30
5 IBU Pac Hallertau @ 30
A pinch or two of Pac Hal or Riwaka at flame out as the guidelines say low to no hop aroma... heresy I say....
Be tasty with those 30 min hops at 10 minutes too - if you weren't too style driven. What's the gravity ?
I never get too much flavour from Pacific Hallertau - or Hallertau Aroma for that matter - I never got the big orange or marmalade thing that the literature suggests
That's not a bad suggestion about moving the hops to 10 jt. I'm only looking at it for the SOBA NHC and for father in law's 65th in a month. Grain to gut in a month should be easy as!
OG works out about 1040, however depends on my efficiency on the day!
Pac Hal has been a mediocre hop for me, I prefer riwaka's performance!
