Hey guys, ive managed to get my hands on 5kilos of flaked maize to play with, and im keen to knock up a CAP which will lager untill the weather gets warm again..

All the recipes ive found have 6 row in them, so seeing as we cant get that, whats a good sub? Should I just go for something like Global Pilsner malt? Or something with a bit more beef like Golden Promise??

Still unsure what yeast I should use also? Any ideas??

Hopwise im probably just going to do a single bittering addition of Nugget, allthough its tempting to go with Amarillo or Columbus, but itll probably be a bit too much for the style lol

I'd use the Pilsner malt and get a little sachet of pilsner enzyme and add a gram of that to the mash if you are worried about conversion. However... I've gone as high as 20% adjunct in the mash before without any problems.
Yeah im not too worried about conversion, not enough to go adding that dreaded enzyme in lol

Would any Pilsner malt be ok? Im out of Global and dont want another full sack, obviously not ADM lol, but I have some Weyermann Pilsner??

And what yeast would you use bro? Any reccomendations? Ive got some Bohemian Pils yeast in the fridge...
My yeast pick is wyeast 2007.. pilsen yeast.

PS Where did you find the flaked maize?
I used Weyermann without problems in the same beer style...

Yeast? Either 2112, or your Bohemian Pilsner yeast. 2112 is better suited to the style if you wanted to be anal about it. I think Mike Neilson might have some American Lager yeast tucked away somewhere.

If you ask me - any lager yeast will do the job... even s-23.
When you say American Lager is that the cali lager yeast? If so, im fully not keen on that strain from the beers ive tasted that were brewed with it, but that was just my personal tastes...

James, im getting the Flaked maize through the brewer at Leigh Sawmill, but they said they wont post it due to time restraints so I have to go and pick it up, good excuse to go for a beer tho...
No, the Cali Lager is 2112... the Amrican Lager is something else.

Just go with your yeast that you already have... they are all pretty much the same!

Heres the recipe ive got so far...

3.425kg German Pils
1.25kg Flaked Maize
250g Munich
125g Cara-Pils

FWH : 12g Columbus
15 : 10g Amarillo, 15g Centennial
FO : 15g Centennial

Bohemian Pilsner yeast
I got 2112 if you want it, It better than American Lager Which is 2032, 2032 is shit!! well not shit but there is 100's of better Strains. I wouldnt mind some flaked maize good in English Bitters!!
