Just wanting to know how long is everyone waiting for the S-05 to clean up the beer? Every beer I ferment with S05 leaves me with a cloudy beer out of fermenter (Even sitting for 3 weeks). I have split Fermented a control using S-04 to see if this has been bad practice. After 7 days the S-04 is crystal clear and the S-05 is just like other S05 brew I have brewed. I have one at the moment that looks like a good Wit and believe it or not tastes like one also? Heres the recipe to prove it aint.

5.00 kg Pilsner (2 Row) Ger (3.9 EBC)
100g Cara-Pils/Dextrine (3.9 EBC)
10gm Nelson Sauvin [11.40 %] (15 min)
60gm Cascade US Plugs [6.80 %] (15 min)
30gm Cascade US Pellets [6.30 %] (10 min)
5 gm Challenger [7.50 %] (0 min)
30gm Cascade US Pellets [6.30 %] (0 min)
10gm Nelson Sauvin [11.40 %] (0 min)

1 Pkgs S-05

I've been using that Swiss Voile (sp?) material and making my own bags. Seems to work well.

I'm quite handy with a sewing machine (not really, took me fifteen minutes the other day to remember how to turn it on :-S )
I'm just sampling one of my SMaSH brews brewed with MO, Riwaka and US-05 exp 03/09 after two weeks in primary and two weeks in the bottle. The beer is by far the cloudiest beer I've brewed and is under attenuated. The Riwaka hops are keeping me interested all the way to the bottom of the glass but I could swear that someone sneaked some crystal malt in there while I wasn't looking.

It just goes to show that you can plan a brew to death but if the yeast isn't up to the job, your bitter/sweet balance will be screwed.

I'm going to go and sniff the airlock of my two S04 brews now.
S-05 brewed with this in my Simcoe Amarillo Cascade brew from monday and it looks like it heading the same way as the the one on this topic. But it smell like the best fruit bowl you could smell and tastes like peaches and pineapple? and no im not on drugs!
Add a bit of BO in there - and this is the Yakima Monster... Sounds nice!

Does it look anything like this? This has been dry hopping for 3 days with the same batch of US 05 as yours - and I'm quite happy with how this looks - they become quite clear after some CCing.
This what it looks like You should smell it though, Mangos?

Fuck that's brutal. Straight from the fermenter or keg/bottle?

I'm drinking an APA made with S05, unsure of batch number though, and a little wheat in the recipe.

I would call this hazy. You can see through it but just not much detail.
3 Days into primary, it's not the haze as I know it still fermenting but its the smells that are throughing me!!
You need to get some koppafloc for the kettle off Stu, and some Magi Fine for the keg. The beer will be as clear as you want it to be when you play with the doses.

As a rule of thumb, I use 75% of the recommended dose to see what it does to the brew. Different gravity brews need different doses - so there is plenty of experimentation for you... more brewing fun in my opinion.

I doubt the yeast is bad. It looks like a normal unfined, and unconditioned ale to me bro.

As far as the smells go - this is normal for oily US hops. Enjoy it! I'd be more worried if you were getting rubber / sulphur / barnyard / vinegar and other shit smells on the nose.
Oh I used whirflock for this and the beer went in crystal clear I could see the trub from 1/2 to a 1/3 from racking, I might try gelatine or magnifine, just as an experiment? Defintly no vinegar or sulphar from this fruit bowl, its actualy quite awsome?
Sounds nice. Fruit bowl aroma is quite normal! Desirable some might say!
Hardcore :o) Yum!!
