yep, it doesnt mess around. get the job done and then back to bed! it usually bubbles a bit for a week or so afterwards though but nothing really happens to the gravity and i have had no ill effects crash chilling after 1 week but I usually give it a good 10 days just to be sure.
Well, planning on brewing tomorrow morning, got a big cake of US-05 to chuck a brew at, so im thinking my Maris/Cent sorta SMASH beer with a touch of caraligh and vienna to beef it up a bit, and around 150gms all up of centennial :o)
Yum!! And as soon as the fermenters clear, planning on doing 2 cream ales with my new WLP Cream Ale blend, and then when I have a huge cake of that, will be doing a sort of Pseudo CAP with it - Im quite excited about this yeast as apparantly its a blend of ale and lager strains which is supposedly good for warm fermentation - should be interesting... Will I go back to US-05? lol
Wow, just took a hydro sample of my brown Saison and its had the colour stripped out and is more red, not to mention the fact that the SG is at 1004 from 1070!! Awesome :o)
I couldnt really taste much of it from the hydro sample, its definately there tho and its malty as hell tho allready and tasting pretty good! Im going to put this into the keg that had my old ale in it and let it sit for a couple of months before I tap it...
Brewing this in my new brew space on Sunday. In continuing with the Tintin themed beer names this could be the first in the series of Haddock insults. This is meant to be along the lines of an American Red. Not sure where its going actually.

Looking good Bambule, I love American reds, I think the choc and amber will give you some nice toasty notes to back up all of the hops!! And I reckon sauvin will take a bit of a back burner here (for once) but will add a nice complexity to the overall hop character!
Simcoe and Amarillo = My favourite hop combo, with a bit of columbus in there ;o)
