Yeah I know!! I will brew it but maybe as a Belgian Pale Ale for my Belgian Dark Strong in a few more weeks.
Yeast Maker looks awesome. I've been thinking about brewing a Stryrian & Simcoe pale ale but Styrian & Amarillo sounds great too.
Triple B (Belgian Mild)
UK Pale, Crystal 90, Pale Chocolate, Wheat
Pacifica @ 60, 20, 10, 0min

Chimay yeast.

This is the only yeast I've had trouble with in the past - sluggish, twice! - so here's hoping my two-step starter has bot the b'stard humming this time.
That sounds like it has the potential to be very tasty indeed. Your beers may yet convert me into a Belgian yeast fan :)
I hope so... there's lots of fun out there beyond hops and malt.
Be careful though Llew, it was Stu's Belgian ales that introduced me to Belgian ales and now I love them. I have 44L of Belgian goodness sitting in fermenters and kegs right now!
Glad to have helped hook you (even if I didn't really like those beers!!! i guess we are always our own harshest critics).

It's nice to have fun with Belgians that are beyond usual Wit, Blond, Dubbel, Tripel and fruit beers that we see here. Belgian Pale Ale, like English Pales, is the perfect balance of malt, hop, yeast and water for me... I could play with it for years, in fact I probably will!

I'm keen to start brewing with some interesting English yeasts soon too.

S-04?
yeh, point taken, it certainly is an "interesting" yeast.

Were they early versions of Plan-K? From memory they seemed quite similar.
