Second attempt at this kind of beer. The first was Kavorka, more of a Belgian Red IPA with Chardonnay. It was pretty schizo until about 6 months old and then it really hit its straps. This one is more like a strong Belgian Blond with chardonnay must (think Leffe++, with chardonnay).
Pilsner, Munich II, Caramalt, Sugar... Sauvin and Motueka hops. 1.078, 48ibu.
Fermented with Chimay yeast for 5 days at 22c.
Then added 3L chardonnay must to 30L of beer. Fermented another week at 22c.
Kegged, carbonated and cold conditioned for 6 weeks.
I broke my hydrometer on brew day but estimate this via Promash to be about 7.8% before the must went in... It'll well over 8% now.
Carbonated this up at the start of cold conditioning but I tried it on Thursday this week and it was a really low in carbonation (no temp change so keg must have a slight leak)... so I've added a 3g/L sugar syrup at bottling. I'd leave it a few weeks, at room temp, before chilling and drinking. I hope there is enough yeast to get a good bottle ferment, otherwise it is going to be DAMN SWEET!

I'd love to say I kept a bottle back, to let you all know when to drink it, but I only had a half bottle left (after paying "courier") and I drunk that on the night I bottled... sugar syrup and all!!
Keep it warm for a couple of weeks, at least. Hopefully there will be just enough yeast in there to carbonate it up a bit, otherwise it'll be something like La Trappe Tripel on handpump!
I gave it a squeeze last night and it measured up well on the firmness chart.
But given that I've got a litre bottle I might wait till I've got some company to broach this one!
Drunk mine and it was sweet as!! As in fit for consumption
I'd been holding off having this, but with only three beers remaining for me from the case, it seemed like about time. Pours a slightly hazy gold with a medium white head which disappears pretty quickly. The aroma is bubblegum and pears, initially I thought grapes but now I'm not so sure - which is unexpected, given the grapes and the sauvin in there!
On the palate it's got a good fruity thing going on, pears again, with the bubblegum in support and a little bit of something I can only describe as 'spicy'. The bitterness is there but only really at the end, where it does a good job of inviting you to take another drink. I also get some alcohol warmth in the chest but it definitely doesn't come through in the flavour, so great job on that.
Overall I'm glad I got to try this - it's not something I would ever have brewed for myself, but I liked it. Cheers Stu.
I just cracked mine, couldnt resist..
It was a little low in carbonation, but in comparison to other beers in this swap it was right on par with the rest..
I too get the grapes and the bubblegum.. a punch of sweetness then the bitterness kicks in...
Interesting flavour profile, not something I have ever tried before but wouldn't hesitate to smash over another bottle.... or nine

Enjoyed this one the other night, very curious beer! I struggled to describe the flavor and aromas but here's what I wrote down:
Poured a nice clear pale copper colour, carbonation seems perfect. On the nose I got the obvious bit of wineyness, some pear and some subtle belgian yeast notes, reminded me a bit of Galbraiths Resurrection.
Crisp Bitterness with a slightly sweet caramel note coming through. The yeast character became much more prominent as it warmed up. This was really drinkable, the alcohol seemed really well hidden but I definitely knew about it nearing the end of the bottle.

2nd to last case swap beer for me. Pours nice and clear, highly carbed. 3rd Belgian of the night and they have all been the same level of carbonation. Didn't realise that was the norm but it goes well. Anyway another very lively head that drops off quickly. Nice and clear. Some fruit and phenolics on the nose, taste is firstly fizzy beer followed by the wine flavour and then some malt sweetness seems to kick in to finish it off. A bizarre beer, who would have thought that beer and wine would go so well together. I'd expect a complete mish mash of flavours but surprisingly it seems to work. Again like Bambule's the alcohol doesn't seem that in your face, more warming as you work your way through the beer.
