Tettnang 5.20% 60min
Wyeast 3068 Weihenstephan Weizen

OG 1.052

IBU 15

Stepped infusion mash: 52C 15 min, 62C 30min, 71C 30min
90 min boil
Pitched yeast at 12C, raised to 18C

I had to use much more Munich than I would have liked as I didn't have as much Pilsner malt as I thought
Not to worry Brett - Tradition German Hefeweizen is 60 / 40 Wheat / Munich. Your recipe will be quite close to a Schneider. Tettnang has become my fave hop for these beers. Perfect mash schedule, and a well disciplined pitching. I should expect that this beer will be Hefe perfection.

Great work!

Next up for you will be Aventinus!!!
Thanks Joseph, I'll let the swapees make up their own minds about how close this is LOL. I do have a bottle of Schneider's and Croucher's Hefe so I'll do a 3 way tasting tonight..

And yes, The Aventinus is next on the brewing schedule, will base on your recipe in the recipe thread.
