Doing a German Weissbier out of the Weyermanns Ultimate Almanac of World Beer Recipies. Had to sub Munich II for Munich I. Since they didnt name it and if it works out may call it "Wheat Baby Jesus"

19L batch
Pale Wheat Malt - 1.79kg
Pils - 0.65kg
Carahell - 0.49kg
Munich I - 0.100kg
Aciduated - 0.23kg

Wyeast 3068

Multi-step infusion (shudder....). Mash in with approx 65% of net kettle volume of brewing liquor at 37deg
Raise to 45 and rest for 10mins
Raise to 52 and rest for 10mins
Raise to 62 and rest for 30mins
Raise to 72 and rest for 30mins
Raise to 78 and mash out

Sparge 100mins
Boil 60mins
Hallertau - 21gr/45mins
Hallertau - 28gr/flame out

Prime with Weyermann Amber LME 325gr

Warm condition 7-8days @20deg. Cold condition 2 weeks @ 5deg
Sounds interesting - I think the single fruit might lack a bit of depth but the english yeast should roughen it up nicely. Always keen to be on the evaluation panel in 6 months time!
Looks awesome! How did you pulp the apples? Did you use a press as well?

Brewing a Saison today

64% Dingemans Pils
20% Wheat Malt
6% Acid Malt

5% Palm Sugar
5% Dextrose

65 Degree Mash

10Ibu Czech Saaz @ 60

1/2 a cup of zested limes 3 Lemon Grass Stalks and 15g Fennel Seeds toasted and ground in the Whirlpool

1.050 1.008 .5% ABV

Lactic to get it a little acidic if it aint tangy enough with the lime and lemn grass say PH of 4???

I've been drinking the Saison at the parrot & jigger on the guest tap.
Not a bad after work beer but I reckon it could do with more of this !
I should head down there and try it any good?
I'm not a keen Saison drinker at the best of times, I'm really only drinking it so the keg finishes and something else pops up on the guest tap !
I've already put my vote in for another keg of the Tuatara APA myself . . .
Good man!! I dont think theres any left when I left on Tues I only seen 4 kegs left of batch 3!! So it was probably all gone by Thursdays deliverys

Good hand pump beer.
410g in the boil should be enough right? 150g in the Dryhop? hahahaha, Might have to use the hand pump as the hops might clog my 6mm Id lines!! hahaha
