Doing a German Weissbier out of the Weyermanns Ultimate Almanac of World Beer Recipies. Had to sub Munich II for Munich I. Since they didnt name it and if it works out may call it "Wheat Baby Jesus"
19L batch
Pale Wheat Malt - 1.79kg
Pils - 0.65kg
Carahell - 0.49kg
Munich I - 0.100kg
Aciduated - 0.23kg
Wyeast 3068
Multi-step infusion (shudder....). Mash in with approx 65% of net kettle volume of brewing liquor at 37deg
Raise to 45 and rest for 10mins
Raise to 52 and rest for 10mins
Raise to 62 and rest for 30mins
Raise to 72 and rest for 30mins
Raise to 78 and mash out
Sounds interesting - I think the single fruit might lack a bit of depth but the english yeast should roughen it up nicely. Always keen to be on the evaluation panel in 6 months time!

I'm not a keen Saison drinker at the best of times, I'm really only drinking it so the keg finishes and something else pops up on the guest tap !
I've already put my vote in for another keg of the Tuatara APA myself . . .
