Hops are using up some some odds and sods to clear the freezer of multiple bits and bobs.

Mashing at 66ºC.

I'm reduced to dry yeast. My starter of liquid yeast harvested from my previous lager failed, so I'm using 2 packs SafLager S-23. Ferment at 10ºC for 3 weeks, then into the lagering fridge while mrs warra and I visit France, Belgium, Germany, and Nederland.

Brother-in-Law is coming over from Martinborough in the Wairarapa to house sit for us while we're away. He saw it as a good opportunity to have some peace to pursue his writing, and have a break from my sister! Missing a month of winter in the Wairarapa is probably also not a bad thing. Darn cold there with snow on the hills east and west of the valley, and with a southerly blowing, it's arctic.

I dream of brew days like that!

Got drank out of house and home by a flood of engineers on friday night, so up early today to try and rectify the situation with a double batch of pale ale (which will have a similar function to the zinc diode on an outboard motor - stop the important stuff from getting consumed).

The grain bill is roughly 82% GP, 10% munich, 5% carapils and 2% crystal, I'm rapidly settling on this mix as my house pale ale. I hop it different each time though. Today I'm doing a split boil, one US and one a NZ/US bastard brew.

 

9:30 and mashing out already!

Time for me to hop the absolute shit out of something.  Was going to brew a Pliny clone but thought this would be a good opportunity to use up the Riwaka that's been in my freezer for a while.  Then thought I'd crank it up to eleven and see how far I can push my system hop wise.

Tomorrow I'm putting down a 20L batch of Foreign Extra Stout

65% Pilsner

20% Flaked Barley

15% Home Roasted Barley

05% Home Roasted Chocolate

25gm Northern Brewer at 60 mins to about 40 IBU.

 

Cant decide whether to use US-05 or 1469, any advice?

Is 20% Flaked Barley too much?
