Ok, so What Are You Brewing was a hotty, as topics go.

Now I'm 15 pints into a keg I only filled on Tuesday and wondering if anyone else has a favourite at the moment ?

It's my second brown with US-Oh05 and it's better than the forst, maybe Ikept the temps down a bit during the scorcher we had in januray

Back to reality for me today after a truely epic trip, so many good beers were tried including a brewery tour at Stone, way too many to write down here so watch my page for a blog over the next few days when I get time, and after ive gone through my several hundred emails! lol
Man, I need a beer, ive got a keg of all centennial pale/amber ale waiting at home for me! Roll on 5:30!!!

A few things ive noticed about centennial as a hop are

1. For me it needs a few weeks conditioning for it to be lush, I dont really care for it fresh, which is unusual for me as normally US hoppy goodness tastes great out of the fermenter... and
2. I dont like it as a flavour hop, good for bittering and aroma, but im a bit 'meh' about it in the kettle from 20 mins to 0 mins for some weird reason that I cant quite put my finger on??

Drinking an all centennial IPA at the moment and thinking the same thing, I reckon it's kinda clashing with the crystal malt flavour a bit - still needs a couple weeks of conditioning though.

If I was to rebrew something similar I'd probably go simcoe and/or amarillo to flavour and then cent for aroma.
Yeah theres def something in it that clashes, I seem to remember that ruination clone recipe on here not having any flavour addition either which would sorta back me up... From memory it was just a bittering addition then a huge flame out and dry hop?
Pretty much - apparently in Ruination they just bitter, whirlpool (listed as a 15 minute addition in the BYO clone recipe) and massive dry hop.

I went with 30g at 30, 15, 0 and 60g dry hop for a 20L batch.

In hindsight would probably go with some simcoe or amarillo at 30, a mix of simcoe or amarillo and cent at 15, all cent for flameout and a mix of the three for the dry hop.

One thing I am loving about this beer though is that its aroma is almost exactly like sticking your nose into a bag of hops.

The North Welly Porter must be one of the most highly anticipated beers at the moment. No one has the foggiest idea what it's like and it's oh so limited. :D

With one bottle down it's even more limited now !

What did you think ?
I always suffer from having expectations and the first impression was disapointment. There were hops aplenty but not the malt we anticipated.

But winding the expectations back a notch, or even better go in with an open mind, it's a pretty good hoppy big brown ?

I've got a bottle penciled in for ANZAC Day after a bottle of His Majesty that majically appeared.
What are your plans for the rest ?
I'll need to crack another bottle to analyse further but I thought we were on the right track. Hopping was good but it lacked that chocolately boost (possibly due to poor eff and OG). The rest of mine will get shared around the lads and the inlaws. I'll keep a few sneakies to myself though :D
Enjoyed some Cent PA and Cream ale last night, followed by a drambuie, yum!! Still really loving the cream ale blend yeast from white labs, but next time ill mash a bit higher to try and get a wee bit more body in the beer! 1006 is a bit too dry lol
Hallertau Maximus (takeaway bottle filled off the tap on Sunday). Lovely lovely beer. The aroma may have dropped off slightly but there's still an excellent balance of malt, bitterness and hop flavour in there. I could drink lots and lots of this.
Is maximus still going? Thats easily been a few months yeah? Must try and get out there some time soon!
Nah - they've been brewing it regularily for a while now.
