Yip, ferulic acid rest mine sat for I think 3 hours well main mash anyway.
Final brew of the year coming up this weekend.
The Mild recipe gets it's second to last outing - the brown malt is running out so it'll be a new direction in the New Year for the darker ale

Then the plan is for 2010 to start with a Rakau Ale
Anyone done anything good with Rakau (maybe even in combination with Cascade, Motueka, Hallertau)
Maybe 95% Malturop, or could include 25% Global Kolsch, 5% Pale Crystal
1.040 and pretty balanced, say 20-25 IBU

My venture into using Rakau was Riwaka, Mot and Rakau in a psuedo lager (US05 @ 15). Not bad, and working toward an Emersons pils rip off and totally not your OG, IBU etc..

Recipe:
4.5 kg Pilsner Malt
0.26 kg Cara-Pils® Malt
0.08 kg Caramalt 15
0.13 kg Acidulated Malt
40 g Riwaka 60 min
20 g Riwaka 15 min
30 g Rakau 15 min
1.22 tsp Irish Moss 15 min
15g Motueka 5 Min
15 g Rakau 5 min
20 g Riwaka 5 min
Dry Stout today, I'm sure this recipe has been brewed many a time. Looking to brew to style for the Wellington comp so thought I'd go with it:

No Riwaka, but maybe a combo with some Motueka then ?

Looks like you had about 1/3 Rakau 2/3 Mot & Riwaka

What's the opinion on bitter with cascade then 1/3 Rakau and 2/3 Mot ?
I have an unhealthy obsession with Riwaka, to the point where I will be buying a large quantity when the new harvest comes in..... as I ran out too early this year...

I have found the Rakau, Cascade, and Mot pretty tasty on 1/4, 1/2, 1/4 ratios respectively, but that's probably the Cascade proving dominance!

The Rakau trial is a saftey net - just incase I happen to miss out on my favourites
I missed out once and bought Hallertau instead and it just wasn't the same

Might just substitute Rakau for the usual hop in the standard pale ale - won't be so confusing.
I can always play around with combos when I know what it tastes like
OK, it's still the weekend, well public holiday and the slightly delayed mild is on the go.
Time to sparge !
Tried my dry stout yesterday...It was not bad...Yay. It poured with an excellent head with a caramel tinge and tight bubbles. Nice deep colour. Coco aromas and taste. Slightly thinned body but at 2 weeks post brew, I am releaved.
Wow, brewed it already! I see your straying from your winning two week old beer formula.

I was planning on doing mine next weekend once my shipment of hops arrive.
