Just wanting to know how long is everyone waiting for the S-05 to clean up the beer? Every beer I ferment with S05 leaves me with a cloudy beer out of fermenter (Even sitting for 3 weeks). I have split Fermented a control using S-04 to see if this has been bad practice. After 7 days the S-04 is crystal clear and the S-05 is just like other S05 brew I have brewed. I have one at the moment that looks like a good Wit and believe it or not tastes like one also? Heres the recipe to prove it aint.

Bloody good fermentation has slowed down and is at 1.040. It better get below 1.029, but I do have a fair Idea if I dos'nt, Also I had a look in the hop Freezer this morning and realized I used 30g of super alpha as my 1 min addittion instead of 60g of fuggles, OPPS!!!. I got the Imperial yeast ordered how do I go about getting some to you?
No panic on this matter mate - I'll be using a couple a packs of US05 for my USIIPA. I wouldn't mind catching up with you Welly boys for a drink, so could look at swapping some yeast, beer and bullshit then.

Try S-33. I've used it once and was pleasantly surprised. Leaves a better malt profile than S04, I reckon.
I've got another packet in the fridge now but I'm giving it away to Craig (kiwicrog) this afternoon. I'll make it a condition that he reports back on it ;-)
That's funny. According to JoKing, S-33 is the yeast that comes with the Macs Pale Ale kits. I've been throwing them away!

I put about 5 of them at the back of the fridge last year just in case, I might give them a go.
It was when I called Lion, and asked them about a year or so ago. If you call the phone number on the tin, and give them the batch number Mr Cherry - they'll let you know what strain they are using. If you have any lager kits - give them the batch number for that too. If you are lucky they'll have w34/70 in there. You cant get that in NZ anymore, and it was a great strain.
And I agree with Stu - s-33 is a nice strain. For me, it was quite neutral at lower temps with a little more hops getting through than s-04.
According to Fermentis, you're using a Belgian Style yeast. I'd read other places that it was an English yeast (Edme?) and used it in an ordinary (split with S04 in the other fermenter). Preferred the S-33 to be honest.
I would agree with most of the things on the fermentis link... "A very popular general purpose yeast, displaying both very robust conservation properties and consistent performance" and I would have to assume they refer to its use in Belgian style beers given its tollerance to high alcohol.

However I have to say in my experience, that the only flavour profile it lended my beer was softer maltiness. Sort of "chewy" in a way. Hard to explain - improved mouthfeel compared to s-04? Slick? Wasn't spicy at all (like the t-58) not even fruity really.
Funny you mention that because I remember leaving a "lollyish" profile in the malt... I also remember thinking it would be a nice yeast to use if I was going to brew a base beer to innoculate with brett' as an Orval clone.
Good thinking Stu - I'm planning a lambic brew for around Anzac day (when Christina pops) and cracking into it on the baby's 1st birthday. My wife loves Kreik and I was gonna split the lambic onto a few different fruits in some Demijohns. I have cultured some Orval dregs along with some of Steve's brett from Hallertau.

LMK If you want some dirty bugs for your Lambic Stu - the pellicle is starting to form in my culture, and it smells quite Pine Appley with a touch of wet swetty wool work socks.

I was gonna use US-05 for the primary - but you may have swayed me. Hey Cherry - you got any spare S-33?
