Thought it might be handy to have a thread for some of the more advanced brewers to give some advice on recipes.

Let's see how it goes eh...

I use an oven rack to drain. Just plonk it on the top of the pot and put the grain bag on it.

There is some really good stuff on Youtube . That and the folk on this forum have been a great help to me.

Brewing an IPA this weekend, malt profile same as Yeastie Boys Digital IPA (80.4% Pale Malt, 11.5% Munich Malt Type 1, 5.8% CaraPils, 2.3% Caramalt 35), 1.064 OG, aiming for 6.8-7% ABV. I've got plenty of US Cascade, Amarillo, and Riwaka in the freezer, never used this combo before, but I'm thinking 2:2:1 sounds about right?

Are you looking to clone Digital IPA or just using the base recipe?  The whole recipe is available if you look for it!

Nah not trying to clone, the malt profile just seemed like a good base to build an IPA off, using the hops I already have. Going to use similar amounts as they do (5g/L @10, 8g/L @0) but with a bigger dry hop.

Any tips/suggestions on a English IPA, all EKG or mix it up? Just put S-04 into beersmith for now, but thinking about trying the M27 Burton style yeast though.

Guess it depends on what's available, tho I found an article about Fuller's (I think) and they dry hop with Target.  I ended up using a couple of combo's mostly including EKG, Fuggles, Willamette (a suitable sub for Fuggles apparently) and Target.

Willamette is an American version or derivative of Fuggles ?

That's my understanding, but I would happily use it again, it's a nice subtle 'English' kind of hop.

Should add that I basically copied the recipe from post #4 here; http://www.homebrewtalk.com/f12/anyone-brewed-ipa-ekg-140192/

Challenger is good as a 10 minute or less addition in an English IPA - meadows and marmalade mmmm!
Yeast wise, anything English and liquid if you can manage it. IMO dry yeasts just don't cut the English mustard.
The byo links are good info on english beers. http://byo.com/hops/item/600-esb-style-profile
. And http://byo.com/videos/item/2148-english-ipa-tips-from-the-pros. They are dam hard style to nail, I find time in the bottle is important the hops mellow and meld with the malt over time. I prefer goldings and brambling cross to classic fuggles , I find them to Earthy but that's a personal choice, I like more mellow, have rebrewed my barnsey clone , it's way better after a few months in bottle http://www.bathales.com/ fresh it was too hoppy.

. The sell most of the range mail order There are some pretty good recipes out there for all there beers, I can post you some 1968 London ESB in about a week, pm me. Would be a good time to start water additions this style needs them imho
Cheers for the info, I'm in Auckland today so I'll check out Liquor land Newmarket to see if they any of the Bath ales, I've tried a couple of them a long time ago but nothing stands out in my memory. Galbraith's have done a few good ones recently, I loved the colab they did with Liberty, and last time I was in there they had one called Zephyr on the hand pull that I also thoroughly enjoyed. I've never really beer with UK hops, I figure I'd about time I tried!
