Thats awesome peter. I need something like this too! Problem is my design needs to be 600 high rather than 900. Reason is because of the limited lifting space I have in my low ceiling garage.

Or check out the benches that Savebarn sells.  They often have a 1.5m bench for $1 reserve, and I got one for $170 (after trying for a few weeks).

I haven't used it yet, but I have assembled it.  I don't think mine's the best example as it has a bit of a dent in the side of the top surface (although top is still flat and level), and I'm currently negotiating with them about that.  But it does fell sturdy enough.  The bottom shelf and legs are galvanised steel (not stainless) but it says that in the auction.  The shelf attaches to the legs with grub screws which simply bite into the tube legs.  The legs also have plastic inserts at the bottom which can be screwed in and out to level the bench.  I'll let you know once I've put some decent weight on it.

The one I scored can hold 4 kegs in the sink and 48 bottles for soaking which is a real bonus

All thee stainless benches are great but wrong sizes, too long too high etc.
I'm trying to find a 1200 long 600 wide by 600 high bench, but I'm sturggling. So my plan is to build a wooden one to the size I want. (I do use gas I know, not a good plan) but We do business with a sheetmetal shop, who can cut a sized sheet metal piece for the top, will this prevent things catching fire? I'd say it would... right?

I'd been looking into that issue, and looked into getting refractory board to lay on top of a table.  That's the stuff they use around fireplaces etc, and is non combustible and should insulate a bit.  I don't want to put my burner straight onto the stainless so I might get some of that.  In the meantime I've been using a sheet of ply (~12mm) which scorches a bit.
