I found a recipe for an american Pale ale, sitting at 37IBU, using the Hops Bursting Technique. 20-0min + Dry hop.
Now I know citra and amerillo are really hard to come by at the moment, So I was thinking about using the base malt and putting a NZ HOps Spin on it, using all NZ Hops. I can work out and adjust to get the ?IBU back in the same sort of range.
What are the best NZ Hop subs for these (without using the word Cascade).

Citra
Centennial.
when I can get my hands on some Amarillo and citra, I'll be able to do a comparison.

Just so you know Craftbrewer in OZ have both of those hops and also NZHops posted a picture saying they may have enough Simcoe and Citra for Homebrewers also.
I would use cascade(I know whta you said but this is my flavour) Nelson and Motueka. Wimea (sp?) Is another NZ version hop that could be pretty awesome so maybe that and Nelson could work together.
Yeah, I'll be looking to do it with the american hops at some stage, but thought a good NZ Hop Combo would be great.
No Cascade, cos I know how thattastes, and I'm looking to learn more, plus I've got one or two brews coming up with that already heavily used... Waimea might be interesting, never tasted a beer with that in it, not yet anyways.
Commercial example of Waimea is Epic First Batch IPA. This is single hopped with that hop. Taste is not too shabby.
I also can't wait for their next offering which uses Mosaic Hops which are a Nugget Simcoe mix from what I believe.
I am keen on getting better acquainted with Nelson and Combos using it.
Yeah this beer is awesome. I used to buy it all the time when it first came out. Then I had to force myself to try other beers. Remains on the go to list like Epic Pale, Tall Poppy, PKB and a few others.
Yeah i never thought about digital. its got a great hop combo in it.
What does Southern cross offer as a late style hop?
Has anyone ever used Pacific Jade or Pacific Gem in a late hops addition? maybe even dry hop additions??
What are the differences between Gem and Jade?
What sort of qualities do these ones offer??
and lastly how would these work with something like Waimea or Nelson Sauvin?
I have used Pacific Gem late a few times, usually paired with East Kent. It has come up nicely... nothing off, maybe a little fruity.
My son and I just brewed small test brew with both PG and Southern late. Its a very sweet beer so the hops may not be enough to tell.

My thoughts at the moments are pacific gem, Rakau and Motueka...
either that or Pacific Gem Pacific Jade and Pacifica, making it the true pacific pale ale.... lol.
Isn't it the case that only a few people are able to farm Amarillo so if there is a problem and the crop falls short for the season it takes longer to build back up again.
Happy to be wrong. I think Centennial and Chinook are meant to be the next hops that start to run a bit short in the next few seasons.
