Hey guys, ive managed to get my hands on 5kilos of flaked maize to play with, and im keen to knock up a CAP which will lager untill the weather gets warm again..

All the recipes ive found have 6 row in them, so seeing as we cant get that, whats a good sub? Should I just go for something like Global Pilsner malt? Or something with a bit more beef like Golden Promise??

Still unsure what yeast I should use also? Any ideas??

Hopwise im probably just going to do a single bittering addition of Nugget, allthough its tempting to go with Amarillo or Columbus, but itll probably be a bit too much for the style lol

I dunno about the 2112, it had some funny esters in the beers I tried from memory??
Yeah probably true, But its a solid lager strain upto 17deg!!
Thats probably why its wierd, just doesnt sound right eh :oP lol

Ill probably stick with the Bo pils strain, use a coopers kit for a starter again to get a nice big pitch!
Hrm, I'm after some flaked maize for my attempt to clone Harveys Best. Damn I love that beer. Where did you get this Reviled? Is there any more? Can I just use cornflakes? ;)
I had to drive up to matakana to get it from leigh sawmill... How much are you after mate? I got 5 kilos and have only earmarked 1.25kg of it, so im sure we could work something out :o)

Is the flaked maize really that important in English Bitter recipes? My understanding is that it was used historically as it was cheap. I'm pretty sure Fullers used to use it in both their ESB and London Pride. But I think they've discontinued it.

My understanding at 5 buks a kilo it is not cheap! It is the most common UK used adjunct. And is still used today just look up brewery tour youngs wells on you tube and they show you it!!
Thats 5 bucks a kilo over here, id bet money that its cheaper in the US and UK..

But Peter at leigh sawmill was saying everyone goes on about how it adds no flavour and is there only for added alcohol, but he thinks that it does add a slight flavour characteristic which he hasnt picked up in any beers without flaked maize...

CAP will be the best way to find out what it adds, at 30%, if it adds something, ill know about it :o)
I brewed a CAP last year or so ago... I used 25% polenta in it... pretty much gonna gice the same flavour as flaked maize. I have to say that it was almost sweet in there... like the corn added some sweetness.

Who knows...?

My RyePA is tasting frickin wicked ATM... its taking me all my willpower not to crack into it and finish the keg.

Rye... now thats a good adjunct.
They have discontinued it. However, I want to try it for myself. It may not be that important, but I want to give it a crack before I discount it. I also have a friend who really wants it. Can't argue with him. :)
