"Had my first taste of it last night and thought I'd maybe gone too far with the hops. Halfway through I decided there is no such thing as going too far with hops"
Its funny cos I thought the same thing when I had my first sample of my pliny clone out of the hydrometer test tube thingy, it was so savagely bitter and insane!! But after a couple of weeks conditioning and some carbonation it smoothed out nicely and just became awesome :o)
Its the bollocks!! Give it whirl for yourself!! I cant help but think though in larger beers 1.075+ the melanoids are pretty full on!! all most like theres melnoidin malt in it but there is'nt.
I swear theres melanoidens in the kolsch malt, im yet to try any beer ive made with it - about a week to go for me, but the smell and the taste of the grain definately indicate melanoids - in fact I thought it was very similair smelling and tasting to Munich malt!
