I use 2 x 2000W elements in my Keggle, that are controlled independently so that once a rolling boil is hit, I can turn off 1 element. As for the HLT I intend to only have 1 2000W element as it only ever needs to bring water up to a striking temp. I haven't built the HLT yet, have the bits, just haven't had the time to get it to Chris. All of my spare time has been consumed by my wires, beauty salon build.

I have got 3 STC-1000, and 1 SESTOS AC/DC12/24v PID.
Just finished putting the components together in my cabinet. The 12/24v PID I don't need, Instead I used 3 240v PIDS but the 12v means you need 12v power supply to run it, which outputs 12v to the SSR that then switches 240v t your element, its all your if you want it, will flick it of for $30 with a 25A SSR and thermocouple, You could also pick a 240v up for $42USD from eBay
You can get small LED transformers that take 240v down to 12v eBay just need to get 1 with the right amps for the PID, not sure of the top of my head what the PID wattage is, but will check it tonight. As for the enclosure checkout JayCar, the PID is 48 x 48 x 90(deep) but wait until you have all the parts before getting a case. The SSR needs a heat sink too, they don't get incredibly hot, I tested a 25A SSR running for 90min and the heatsink got to max 34degs, without the heatsink I didn't test. I have a heat sink that I can give you anyway.
