This one is my first CS entry and first go at using Sauvin and Cascade in a NZ Pale Ale. 

I'm hoping that putting up a kit and bit brew for the case swap isn't bad form - I entered it because I thought this was the best of my efforts over the summer - and the partial mash ESB I'd originally planned to enter didn't make the grade.

0.23 kg Carared (Weyermann) (24.0 SRM) Grain 5.53 %

15.00 gm NZ Cascade [9.00 %] (20 min) Hops 8.7 IBU

Pours a murky amber with enough carb to give me a foam over when I first cracked the bottle.

 

I got tropical fruit hops and a little Belgian clovey funk on the nose and having had this on the back of Revs BAPA I presumed I didnt wash my glass good enough, reaching for the recipe and then reading Stus comments Im tending to think that the touch of Belgianiness may be fair dinkem.

 

Hops and subdued malt profile are there in flavour with a proportional bitterness, though the tart, honey-clove flavour is there again on top. Leads me to believe there is definitely some Greenlane Brett lurking there somewhere!

 

I think Stu summed it up nicely with the Orval fusion comment, given that I love pale ales and Orval is in my top 5 favourite beers I definitely give this a thumbs up! To my tastes the clovey-tartness is actually fairly dominant, would be interesting to try in a few weeks/months as given the timeline of comments I suspect the wildness may be advancing.

Cheers fellas - as time goes on I get better insight into whats going on in my brewery. 

HaHa LOL Brewsci - Greenlane Brett - is that a local terroir strain?  I think you're both being generous talking up the contribution an infection has made to this one.  No matter how ïnteresting the end product an infection is an infection and not good if it wasn't intended to be that way. 

Unfortunately I'm buggared if I know how this has ended up infected - and even more stumped about repeating it in a measured and intentional way if it seems to be a good thing.  So it looks like I'm going to have to resort to extreme measures to crack this damned infection thing.  New fermentors, triple strength caustic rinses, blast furnace autoclaving the shed, brewing under a full moon on converging meridian lines.....

Had this one last night.  Poured with a slight haze a nice coppery gold and a big head.  Lovely NZ hops on the nose.  I do get a bit of a metallic taste which I would put down to using extract, but it passes the more I drink.  Not sure how you deal with that, I'm always amazed that Kempicus was the homebrew champion brewing with extract, so there is hope!   Towards the end there seemed to be some belgian spice and funk coming through but it could just be me.  This beer was really drinkable and the you've got the aroma and flavour hops down quite well.  Maybe explore using some of the muntons unhopped extract if you haven't already as the best extract beers I've tried have used these and you could barely tell they were extract beers. I''ve heard great things about Kempicus' extract brews, which I understand were pretty damn big and must have been out of this world to come tops in the NHC - something to aspire to for sure.  Does anyone know if he's listed any of his recipes anywhere here?

Enjoyed this on Friday night after a brutal maths exam.

 

I enjoyed this beer. Some HB pale ales I've drunk taste cluttered, but this was great. Bold caramel sweetness, good hop fruit, solid head. Some molasses in the nose as well. Good of probably done with a tad more bitterness for my tastes, but hey, what do I know?

Thanks Stu - appreciate the comments - I agree on the bitterness front.  Its definitely fading now.  I had my second to last bottle of this  a couple of weeks ago and its tasting a little unsupported on that front to me now too.
