This beer was brewed together in Richard Jack's brewhouse - although fair to say there are two different beers included in the swap, as we split into two fermenters and pitched different yeasts: S-05 in one, and Brettanomyces Bruxellensis Trois in the other.
The Trois strain is known to produce tropical fruit notes, so to balance that we added copious amounts of Motueka, Kohatu and Nelson Sauvin hops to ensure the we got sufficient fruitiness.
In the case swap there are equal amounts of bottles fermented with each strain. Each bottle has a random 3 digit prime on the label - post your guess of which yeast was used and quote your number - I will let you know if you are drinking Jekyll or Hyde...

I should post some fermentation notes I suppose...
The SO5 version was pitched at 17.5 and after a few days was allowed to rise to 20.5. It fermented dry at about 1.012 in a week-ish. The Brett Trois version was pitched at 19C and ramped to 23C. it took an extra week or so to reach what seemed to be a stable finishing gravity at 1.011. I left it there for an extra week to be sure too.
These beers were kegged in a real hurry to get them ready for the swap, so clarity is probably not up to usual standards for kegged beers, sorry to anyone who got some floaties.
As far as what to expect from the brett, I've got nothing. This was a shot in the dark and a bit of a fun experiment, inspired by this: http://www.themadfermentationist.com/2012/07/100-brett-trois-ipa-re.... I got a glass full of it when we were bottling but I had a completely blocked nose, and I ran out of gas bottling the swap and still haven't had any more! I'm really looking forward to trying it...
I hear there were some no shows so there may be people with two bottles of this? I really hope you've got one of each, if we'd known that was going to happen we would have planned for it to make sure everyone got one of each.
Enjoy.
Bottle #991.
Poured lovely clear, deep gold. Very little head, despite being quite fizzy.
Shittons of tropical fruit aroma, love it! Nicely round and full-bodied flavour, not overpowered by malt, but it certainly is there. Not massively bitter for me, though the bitterness does hang around for a good while after drinking.
I feel like I have a US-05 bottle.
Cracking beer dudes, I guess for me, a touch more bitterness and do something about the head retention?
Just drinking #757 now - I think this is still a US-05 one? Still delicious though!
drat, you got 2 SO5s. Sorry!
ok I am 99% sure this is brett #839
Appearance Slightly hazy good head and plenty of life.
Aroma Big tropical pop on nose. thinking passionfruit and pineapple
Flavour Initial hint of fruit burst then sourness. I am sure this is too sour for us05 I detect a little horseyness... sure its brett and the yeast vas unusual look...
Overall sure this is brett its too farmy not to be.... I love this like a lot, but still has a slight sweetness that would have gone if I was more patient!!!
starter is happening....
wife says horsey and she is a rider..
#839 is indeed brett
Bottle # 617
Appearance Bright Golden, well carbed but small rapidly fading head.
Aroma Luscious tropical fruit, Peaches (hint of dry-yeast 'burnt rubber'? But this could be auto-suggestion after the clean peachiness!)
Flavour Stone fruits, dry finish and nice bitterness balancing a little malt. Full, rounded sweet hop finish.
Overall Must be the US05 version for my money. Surprisingly sweet impression from the hops & hides a hefty alcohol level (Could be an alcopop!)
#617 is a brett :)
Pesky Jack & Smith tripping me up! Amazing what the brett will do on its own.
Bottle 131
golden, little head, but pleasing foam clings to glass
Aroma, wow, liking this, hoppy fruitiness
Flavour follows, well bittered, I think my preference is to the bitter side of balanced, and really enjoyed this.
Lingering strawberries(?) fruitiness which i/ve not experienced before, so makes me think i have a brett one?
Lovely beer, thankyou
131 is a brett, yes! That yeast has an awesome frooty thing going on, yeah.
