Isn't Bell's 100% Centennial?

Your dead right about that according to their website 100% Centennial. I wonder where that recipie came from

I eased the alcohol back towards mid 5's and brewed this last night ,so its really more a pale ale then an IPA  wyeast 1272    2L starter,   my chill water was running at about 8C and I got the clearest wort ever...  but I screwed up and added a bit to many hops a bit early on so on the fly remodelled the bittering so its not a full copy of the us clone hop schedule,ended up being a 65min boil.    Going to keg 1/2 and bottle 1/2 to compare the result after 4-6 weeks etc.

ok This is a great beer , can recommend this to anyone who likes a good clean pale ale.  The 1272 seems to attenuate very well (I mashed about 65C) , great base beer that could easily be hopped up, but this, makes a great session beer, will be at my summer Shebeen and Brai  party on tap this year.     

I will have some of this at the home brew tasting if there is any left.

What OG Did you aim for Peter?

og 1.052  fg 1.010  was better in keg then in bottle but almost all my beers are like this unless I wait in bottles about 8-10 weeks....   except stouts which i only bottle and wait 3 months.   it must be noted this is not really a hoppy beer, Centennial is a good base bittering a flavour hop but doesn't pop, thus it is an easy drinking rugby watching with mates beer, slides down easy,   it has the base and depth to support a decent late hop addition of classic us hops ie cascade / simcoe / armirillo etc

If I do this again I would drop vienna, and do 3 parts pale ale to 2 pilsner base malt,  I tried a marris otter xpa with lots of late hops recently that blew me away....     thats on the brew list as well.   I think all glad pale is a bit too much for this beer recipe....

I cant knock 1272 , slowish to start doesn't get too hot and finishes if you ramp up for a rest at the end real well,  have a stack of 1272 under 40L of us pale ale will be racking into carboys next mon/tuesday...  you can have some  if you are keen (yeast that is  8)

you could use any of the clean us yeasts even us05, I struggle to get us05 to finish like 1272 tho
