Just a question..... When I brewed with extract I would warm a can of extract, wash out with boiling water from the Jug, then top up with tap. Why did I not get an infection? I worry myself now that I am going to get one that nothing that beer touches hasnt been Star-saned. Am i to over paranoid?

The microbes in water cannot handle taking an envoronment that has the least amout of alcohol and Iso alpha acid. Which is good for the discerning home brew maker: one day of fermentation and the microbes are dead.

Then why are we worried about no rinse or rinsing with Boiled water etc..?

I've been rinsing with boiled water for the last 5 years and haven't had an infection (that I could detect). Lately - I've been using iodophor and rinsing with boiled water and I still feel comfortable. Put it this way - 5 gens of yeast and no infection to speak of.

I rinse iodophor with hot tap water. It is 70c.

See I believe in this but I read literature that say that this is poor practice.

I'd assume there shouldn't be any problem rinsing with boiled water as it should be pretty sanitary. Same with water at 70C, I wouldn't think there'd be much left alive.

But why rinse at all? Iodophor should be a no-rinse sanitiser. That's how I was using it and didn't have any dramas. Were you guys having problems not rinsing or something?

Oh yeah, the above question was directed at Stu and Joking being iodophor rinsers, not saying they're wrong in there actions but have read a lot saying that iodophor doesn't need to be rinsed.

As to your original question, I don't think you're being over paranoid. if boiling some water for fifteen minutes or waiting 30 secs for star-san stops great beer turning into something under-par then it's worth the time IMO. There is some bacteria and that in water but I don't think I've heard of any beer-infecting bacteria living in water.
