I'm after something that will be a bit like the Emersons Pilsner.

I pinched the following recipe off another forum and changed it a little.  What do you think? Will it get me close?

 

Also would I need more than 1 packet of US-05 if I'm fermenting at 15degrees or would I be right with one?

Ingredients:
4.0 kg Pilsner Malt
0.26 kg Cara-Pils Malt
0.08 kg Caramalt 15
0.13 kg Acidulated Malt
40 g Riwaka (5.1%) - added during boil, boiled 60 min
20 g Riwaka (5.1%) - added during boil, boiled 15 min
30 g Rakau (10.4%) - added during boil, boiled 15 min
3 tsp Irish Moss - added during boil, boiled 15 min
15 g Rakau (10.4%) - added during boil, boiled 5 min
20 g Riwaka (5.1%) - added during boil, boiled 5 min

 

90 min boil

1 packet US-05 fermented at 15 degrees

I cant get the hops from Liberty with a credit card aparantly and I dont actually have any real money so the Riwaka hops will have to wait for a couple of weeks.
In the meantime I still want to make a NZ Pils and I have access to

Motueka
Rakau
NZ Cascade
Nelson Sav
NZ Styrian Goldings

What hop or hop combo do you reccon would go well...

Also mash temp. Low or medium? 65 or 67?
Just had another idea - I can brew a double batch and do 2 boils and compare 2 different hop schedules.

1 all nelson sav and 1 motueka and Rakau?
I know that recipe very well..... and it's getting very close. You will see on the same forum (Southern Homebrwers?) I posted mine too,

Cascade and Sav, go the hop rocker! :)
Yeah thats where I pinched it from.

I think I'll do one of Cascade and Sav
and 1 with Motueka only.

In a couple of weeks I'll do one with the Riwaka as per the original recipe.
Jann's recipe is pretty good, but found that the Rakau was present where I didn't want it. I would highly recommend you take Tom Ashton's advice on the changes to recipe you posted.

How did these beers work out JR?

Looking at doing somthing similar myself however Riwaka is out of the picture as nobody seems to have any ;-(

Anyone suggest a sub for Riwaka so far these have been suggested

-Czech Saaz
-A blend of Motueka & Czech Saaz
-American "C" hops particularly US Cascade and Centenial

Do you need a recipe to go with that yeast Chris - what was it ?

Have you thought about a grainbill - Pils and some melanoidin maybe or munich ?
I was quite happy with both beers. The one with NelsonSav and Cascade was the best though. The one with Motueka only was a little too sweet.
I will definitely re-brew the NS/Cascade one and do a little more experimenting with different hops too. Perhaps a NS only one as well.

Both beers were popular with the extended family and non-beer drinkers.
The NS/Cascade does sound nice!!!!!

Working with what is above - if I can sort somthing riwakaish for hops

4kg Pilsner malt
0.26kg Carapils
0.08kg Caramalt
I'd never really considered the caramalt in a lager before.
The few I'd brewed were Malturop, Munich and some wheat.
But seems like between 2 and 6% is the go, yea ?

So Chris, if you go NS/Cascade - I might go with my blonde Motueka/Cascade for a comparison ?
Unless there's any comments on the combo - some Hallertau maybe
NS/Cascade combo is great, but then I am biased (and so were most of the CS4 guys) about that combo.
I was tempted to redo Mr Cherry's Riwaka (sub'd with Motueka) Styrian Golding from p Sharp, but I've just done B-Sharp - want to mix it up a bit.

So from a choice of hallertau, pacific hallertau, cascade, motueka, rakau - what would you do ?
