I was reading a thread over on homebrewtalk about a fellow home brewer who left 3 jars of wort out overnight in 3 different locations - a rosemary bush, pine and pear tree..
The pine and pear turned out rather off with molds etc but he managed to capture something special under the rosemary bush.. According to his findings the yeast he harvested fermented down to 1.004 went off like a rocket and had some fruity/spicy notes to it..
He has since made some 5-6 brew with this yeast and likens it to a Belgian style or saison yeast.
Which brings me to my question - Has any fellow brewers from realbeer tried to capture some wild yeast and make a successful brew with them ?
I'm about to try this out for myself so will post up my findings.. I'm going to leave my 3-4 jars under a avocado tree, apple and loquat..
Apparently its best to leave it out when it's cooler around 10-15 c
