Yeah Im doing this all over again tonight But this time with Simcoe Amarillo and Centennial!! and 40L again, as I can see this all gone come Monday week!! Matt you should defiantly increase your batch size!! as theres nothing worse than never enough!! Also this beer was fermented @ 12 degrees with S05, yes that right S05 try it next time it works, also there a no tasting effects that I have from doing so if anything it has made the beer super clean!!
Just popped this puppy into secondary with some finings and it's tasting great. I almost poured a pint straight from the fermenter! Decided against the dry hop as I want to gauge the hop flavour from the boil a bit better. No one hop stood out or dominated. It seemed to balance out quite nicely. :D
Put this one down yesterday.
Should be ready for some refreshing Christmas / New year drinking.

Premium Pils 48.8%, Wheat 48.3%, Dark Wheat .5%, Carahell 2.4%
Mashed in at 64.8ºC single infusion (couldn't be bothered with decoctions etc)
Hallertau NZ to 17.8 IBU
WY3068 starter.
OG 1.052
Planning to use some of the yeast slurry next week, after bottling, to inoculate a Dunkelweizen.
hehehe. not for this one. I need something hungrier. Case swap beer uses it though!
Actually I was tempted to use some rather old 1272 I have in the fridge but couldn't get any starter wort done in the weekend - I'd need to build it up at least twice. So trusty S05 it is.
That 1272 would be fine with a two-stage starter. It's rocked my RyePA big time and the second generation is ploughing through my PacificAle at the moment.
Talking of starters, must get one going for the Ordinary (Oh To Be In England!) I'm planning on Sunday. Tomorrow night is a little early but I'm not sure when else I'll get it done.
yeah I would have built it up twice, but I just haven't had time to make the starter. no DME, LME, or anything else save a dedicated partial mash to make it from either.
S05 will suffice.
