Yeah if I could replicate such beers I'd probably start questioning the value of my day job. Will go the sauvin. Nice one, cheers.

What's brewing ?
Pretty boring really, another repeat of my take of NZ Hops Irish Red on the weekend http://www.nzhops.co.nz/recipes/irishred.html
4.000 pale
0.215 caramunich III
0.085 chocolate
0.390 brown sugar
20IBU Willamette @60 and 10IBU Super Alpha @15
1.042 and W1275

Thought I'd better get busy as the current keg is almost gone
Took a swig from the hydrometer reading last night
1.012 and a bit sweet yet but a nice tasty zing from the Super Alpha - I'm tempted just to pour warm pints from the fermenter ...
Have you brewed many recipes from the nzhops website?

Always wondered if they were any good.

Interesting that you went Willamette for bittering and not super alpha, any reason for that?
The Honey Brown and a dark Mild and maybe one other from memory but this was the best.
The hopping always seemed so low - I tended to up the hops 25-50%
I used to do it as extract & grains and used Green Bullet - bittering / Super Alpha - late
Only reason I'm using Willamette is that I don't have any GB and the only time I tried it as all SA it was sharp as tacks
Doing a Mild at the mo...

1kg Golden Promise
1kg Munich
700grams Vienna
250 grams Medium Crystal
150 grams Dark Crystal
100 grams Chocolate
60 grams Black Patent

60 min hops : 10 grams Nelson Sauvin
20 min hops : 15 grams Williamette
Flame out : 15 grams Williamette

Planning on using S-04 yeast, or maybe Muntons Gold...

I got about 19 litres all up, havnt checked the OG yet...
I've a sachet of German Lager yeast that's been in the fridge for almost 12 months. Hope it still goes.

Bambule Marzen/Oktoberfest

2.5 kg Vienna
1.5 kg Munich
1 kg Pilsner
0.5 kg Carahell
0.5kg Crystal

NZ Hallertauer to 25 IBU's

Discovered a chiller at work, might have to sneak the fermenter in there for some lagering.
What volume are you looking at Bambule?
It'll be about 20L. I have a fairly woeful efficiency that hovers between 50-60%. I suspect a combination on the quality of grain crusher (from a local brewer) and my sparge set up. anyway, aiming for a OG of 1.056, or there abouts.
Last time I did a lager was a Dunkel about 12 months ago, and it was great, so kind of excited about this. Just an impatient brewer (not to mention thirsty), so it pretty much all ales.
Just tried my very first AG out of the fermenter yesterday and was tempted to pour myself a glass, it tasted fantastic! My own recipe too :o)

2kg Weyermann smoked malt
1kg Marris Otter
500 grams Munich
500 grams Golden Promise
300 grams Crystal Malt
275 grams Chocolate
100 grams Black Patent

60 min hops : 20 grams Goldings, 25 grams Fuggles
15 min hops : 20 grams Goldings, 20 grams Fuggles
Flame out : 15 grams Cascade

Got an OG of 1052, its sitting at about 1019 and I think its finished, but will find out tonight :o) Cant wait till its ready!
1052 to 1019 - what FG were you anticipating, what yeast is it ?
Reckon it has some way to go - maybe
