I wondered if there was any interest to help me create a Hot Water Kauri Falls Pale Ale clone recipe. I love this beer. Theri website describes the beer as

"A generously hopped, aromatic N.Z. Pale Ale using New Zealand grown Cascade, Nelson Sauvin and Riwaka hops.

Balanced with enough malt character from the English pale and caramalt to carry the fruity hop hit.

Aroma of tropical fruit carries through to the flavour which is backed up by a quenching bitterness."

I'm thinking Maris Otter and Caramalt, riwaka for bittering and nelson sav and cascade for aroma. I need to play around with a recipe calculator. Very nice beer.

I'll talk to Dave the brewer and see if he'll divulge the recipe. He brews 2500L batches so will be fun to scale it down for the homebrewer.

Yeah, I love this beer as well.  I'd be surprised if Riwaka was used as bittering charge...it's described in NZ hops as a great aroma hop.  My guess would be Cascade.

That's what I thought. Riwaka to bitter, only a smidgeon of Nelson Sav and a whack of Cascade for aroma. Be interested to see if it was dry hopped.

You could be right Richard, I didn't get any diesel after taste which I quite like. Hopefully Steve will get the nod from Dave.

yeah its a great beer,  I would use a blend of nel / riwaka at 60 min then a decent 10 and 0 and DH just like chur recipe.

start with about 5-6% caramalt , its pretty dry what you thinking for yeast 1272 would fly...  and you going to have plenty      maybe a decent cascade at 20 mins  don't underestimate effect of the flavour additions at 20-30 mins.    my 1272 APA was cold crashed for 4 weeks, man its clear......

Stoked you like the beer enough to want to try and clone it.

Steve told me about this page ages ago and I was going to reply but kind of forgot about it so sorry about that but here's a bit of help for you.

I use Bairds Pale Ale as a base

10% Caramalt (I use Barrett Burston and love it)

10% Munich

5% Carapils

for the hops

10 ibu of Nelson Sauvin start of boil

10 ibu of Cascade at 30 min

10 ibu of Riwaka at 20 min

4 ibu each Riwaka, Cascade and Sauvin at 10min

.5g/L each at 1 min

And then dry hop with .5g/L of each just before the end of fermentation.

I just use US05 as I'm not set up to grow yeast here at the moment otherwise I would use 1272.

Awesome Dave - love your beers, especially the Golden Steamer. Their broad, rounded bittering makes them very drinkable. Good to see them starting to appear more in Auckland.

thanks for the recipe I am going to give this a nudge this week, but with gladfield malts.... may split the batch across a few yeasts to see effect , thinking  us05/007/1968  will send you a bottle of each.   We see this beer at vulture a bit, its a great pale ale.

Hi Dave, finally got around to getting this recipe organized for this weekend. BS recipe attached and don't trust my math to anyone trying it. I will drop a bottle into you in a month or so.
