I found a recipe for an american Pale ale, sitting at 37IBU, using the Hops Bursting Technique. 20-0min + Dry hop.

Now I know citra and amerillo are really hard to come by at the moment, So I was thinking about using the base malt and putting a NZ HOps Spin on it, using all NZ Hops. I can work out and adjust to get the ?IBU back in the same sort of range.

What are the best NZ Hop subs for these (without using the word Cascade).

Amarillo

Citra

Centennial.

when I can get my hands on some Amarillo and citra, I'll be able to do a comparison.

Cheers Aidan, but I'm looking for NZ subs, as I want to do a NZ Variation of the same brew... I'll be grabbin g some riwaka when it comes in.

will you be getting simcoe amarillo etc. at any stage? to compare the two together....a NZ vs US competition

Nikobrew in the States have Citra and Amarillo on sale at the moment - I have bought a few times from them, the last only about a month ago.

They usually make it here in 7-10 days. If you buy up to the weight limit on their $25 shipping deal, you'll end up with a swag of US hops for pretty decent prices.

If you order pellets, it gets through Customs and MAF fine. They don't open the packs because they can see and feel that the hops are pelletized through the vacuum packed bags - so don't go for the specials on the hop dust from the bottom of the bags.
