HI Everyone.
I was thinking of making an IPA with just NZ Hops .
What would work well together with this ie just one variety or two or three.
I have some in the fridge but will buying more next week.

Yes, i bottled it just over 2 weeks ago so will prob wait another 2 weeks before trying. Brew day went good so hopefully it will turn out good. He's a good man for sharing his recipes. May have to try the PKB myself some time. Cheers
Probably going to tweak the malt in this recipe quite a bit before we stop brewing it for "summer"... started as a tweak on the Yakima/Motueka Warrior collboration from mid year but I'm not sure all that Munich works well with the NZ hops for me. Works great in Jo's fabulous (and famous) Yakima Warrior but not with the sweeter NZ hops.
I will probably look at using the grain bill from His Majesty 2009 (the very first His Majesty), which was a very similar colour but only included pale malt, a little carapils and the faintest touch of caramunich II. Most people won't notice a difference but most of the people on here probably will. If we do, it'll be mid-Feb before anyone's tasting it (and I'll make sure the recipe goes up).

Yes, i usually start cracking Pale Ales pretty soon after. Just thought it would be better for an IPA with the hop rate and alcahol level. But i suppose you're right, will crack one open soon. I'm just lucky i've got a bit of a stock to keep me satisfied at the moment.
I brewed an IPA after this discussion and it started at 1054 .
I had it in a water bath to keep temp down to start and then took it out about a week ago to raise the temp sligthly towards the end.
The gravity now is only 1023 which seems high what have i done wrong or should i leave for longer ,i did check over the past five days and it has moved 1 point .

More info needed. What ingredients did you use, what temperature mash etc. If you have a lot of unfermentables in there then that gravity is possible... but still seems pretty high. How long has it been in the fermenter and have you checked the calibration of your hydrometer?
I don't mean to jack this question but it relates to what is happening to me with my Mash Up I made up using BIAB method. I mashed way too high as I made a mistake (so stupid don't ask haha) with my thermometer and came out of the mash at 72 as opposed to the 68 I thought it was reading!
I pitched at 22deg and it read 1.054. It dropped down to 16deg but I turned on the electric blanket and got it back to 22.
After 7 days it has stalled at the orange mark on the hydrometer and it has fermented at 22 deg the rest of the week.
I am not too sure if this is normal or weather I need to pitch some more yeast. I do have more US05 if need be.
