Might have to stock up on some fresh Simcoe before I go, it certainly sounds pretty tasty.
David, I did this recipe recently, and man this is a great beer, subbed crystal 20 for carahell, and pils subbed out for gladfield pale, as i didn't want to boil for 90.
This was awesome. i also had 30g of mosaic, which i randomly threw in ad 10 mins.

Can you elaborate? I've not brewed with pilsner malt yet, does it need a longer boil for some reason?
90 mins is a good idea for any beer with a predominately light coloured grist.

Would it be wise to add a touch of acid malt to help drop the mash pH? My tap water is really soft but I have missed my OG a few times by considerable amounts with lighter coloured beers.
Pils being higher in DMS than other malts. thats generally the only time i boil longer.
I chucked about 1% acid into mine, worked a treat. missed my Og by the standard 2 points on it, thats a volume issue rather than anything else though.
But seriously david, this is a great beer, on the cards to re-brew for me soon. and I've only just finished drinking the batch. its a solid recipe for single hop recipes, thinking citra next time. with a dash of simcoe.
Yeah it looks good alright, I just brewed a similar but toned down single-hop summer/golden/lawnmower brews with 80% pale, 12% vienna and 8% light crystal, one citra and one amarillo, and they're both lovely. Might have to do another side-by-side comparison based on RR's recipe with simcoe and amarillo...
