Rye IPA is in the pot right this minute, looks and smells great! And tomorrow it's an Amber Ale based on Denimglen's recipe I found here while searching for a Tall Poppy clone.

It isn't really a Tall Poppy clone, but as confirmed by Soren there are a lot of similarities, and it could be tweaked to get even closer.
Here's my rendition;

I'll certainly steep the 0min additions for ~15min before cooling, which I didn't last time. I'm undecided about the dry hops, thinking I might leave them out (didn't dry hop it last time) to leave it a little more on the amber side and a bit less like a red IPA.

Did you do this or about to? If it was me i'd go noble hops, less IBU.. should be damn interesting though!
I have done a few saisons lately that are noble and less ibu, wanted to see outcome of this vs simillar past beers with us05. still looking for drier and tarter result. will carb it pretty high.
have a dupont saison clone stopped at 1.010 and a 3711 that dam near went to 1.000. the sample of dupont tastes almost farmhouse, so may bottle 1/2 now and then rack rest onto the 3711 cake to drive it drier.
Right this instance I have the James P pils recipe in the mash tun but scaled to 30L have huge 2124 starter ready.
ohh you've got Belgian blonde listed not saison.. so thought bit different for a blonde..
I was struggling to come up with something to use the bier de garde sp? for.... so thin k bel pale is the only style i really really enjoy may scale back early pac jade and just hop burst at end tho
Wow, 3711 is a beast then. I was planning to use it for my first Saison, but also considering Mangrove Jacks M27 Belgian Ale Yeast which is apparently super dry. M27 used in both the 8 Wired Farmhouse and Behemoth Beer's Iron Harvest Saison which is also great. Maybe I will try a split batch and use both.
3711 is nuts beast... the M27 was amazing in the 8wired farmhouse ale, tho some of the amazing flavour has to be coming from the oats spelt and raw wheat but still very funky... I missed the iron harvest dam it. If I where you I would choose another saison not 3711 and if you need to pitch a big starter of 3711 into to finish... I haven't bottled it yet BUT i think the 3711 may have been too dry.
I am trying to get some spelt malt via home brew west I want 2kg if more get together we can get a decent amount fresh I guess... I have plenty of wheat and oats etc I habe the m27 and was planning at 26C ferment, double batch brett half. For the 3711 I did this only been on brett for 1 month so still early days. there may be little sugar left but i understand brett likes the yeast byproducts.
