Ok, so What Are You Brewing was a hotty, as topics go.

Now I'm 15 pints into a keg I only filled on Tuesday and wondering if anyone else has a favourite at the moment ?

It's my second brown with US-Oh05 and it's better than the forst, maybe Ikept the temps down a bit during the scorcher we had in januray

To much ppm of sulphate!! I forgot it a Pale Ale not a Double IPA my bad!! It Zings in your mouth!! opps.
I too had a young sample of my WBC APA yesterday, 2 days in the keg so was cloudy and full of hop pellets :oD Yum!!

Smelt like passionfruit pop with a hint of citrus, taste is quite well balanced even tho I cocked up the recipe, its more hoppier than I was aiming for and more bitter, but I actually think it will smooth out nicely :o)
I wasn't going to tell everyone mine got 'diluted'.

Always check your OG first before topping up with a bit of water! Doesn't matter, i'll accept the trophy anyway :D
Just like I didnt tell anyone that my WBC IPA that got first place was pitched onto about 2.5 litres of gen3 US-05 and fermented at around 24*c :o) hehe
I thought for a second there you were going to fess up that it was really a double IPA. Anyway, how could you taste any yeast derived funk with all them hops!
lol - nah, no where near enough hops to be a double IPA ;o) It was funny tho, because I had a taste before I left the house, and couldnt help but think it was too balanced to go up against the likes of Jo and Mike - im just lucky I think that the judges remembered the style guidelines ;o) lol
Had another sneaky glass of my WBC APA last night, less hop pellet in the glass this time and I sat down and picked it to bits...

Im really wishing I upped the malt like I was planning to as its come out quite thin at 1010, and I reckon it needs more hop flavour, the aroma and late hopping is good and im happy with it, but I cant help but think that its missing something through the middle in a big way!
Just dry hopped my WBC APA yesterday. I'll give it a few days until I taste it, then the trash talk proper can commence.
Mines bubblin' away at 19c. Perfect brew day, hit all my numbers exactly and it smells like Epic Pale Ale. The hydrometer sample seemed to have a glow to it almost like an aura of it's own...

I tasted my Maris Otter/Simcoe SMaSH called "Dubious Lemon" last night. It had only been in the keg for 36 hours, but I couldn't resist. Nice, though lacking complexity. The caramelisation I did (5L down to 2L) hasn't had much of an impact, though there is a nice biscuity base to the malt which is different to the usual MO flavour. Simcoe is a beautiful hop, and works really well as the sole starring role. There's a little solventy alcohol, which is odd given the low fermentation temp, and at 5.7%, it's not a huge beer. That's really the only flaw, and it's very easy to quaff. I'm happy, and will see if I get happier after it has conditioned a little longer.
